Eggplant Parmesan

My husband and I just joined the Meatless Monday movement. You may be thinking oh, how granola of you – but before you judge, listen up, it’s a really cool initiative. The goal is to reduce meat consumption 15% in order to improve personal health and the health of our planet. Mario Batali even pledged to adopt the campaign in all 14 of his restaurants. And with summer upon us, my garden planted and a friendly neighbor who drops off her extra CSA veggies, I figured it would be a no brainer.

But to be honest, the real reason I signed up for this initiative is because it seemed effortless and provided me with all the tools I needed to succeed (a must-have for any program looking to change behavior). With a simple keystroke, I had access to countless entrees for breakfast, lunch and dinner, saw stories about influencers who also joined the cause and viewed the real health benefits that come with adopting a diet focused more on squash than steak. If you’re a blogger, they even have an area where you can submit your site address and be included in the list of bloggers who have pledged to go meatless on Mondays.
