The Queen Of Kale


 

kaleThat’s me. The self-proclaimed Queen of Kale. I am a lover of greens. And I’m not your bandwagon green fiend.

Salad has topped my favorite-food list for years. As most Ponies know, I enjoy my favorite mighty leaf every day for lunch. So that pretty much makes me an expert on the subject.

As you head into the New Year, resolutions in mind – which undoubtedly include some sort of healthy eating – here are some ways you can incorporate my favorite superfood into your daily life.

Salads

My daily salad is a tried-and-true recipe that has been perfected over the years. It includes kale (surprise!), green peppers, avocado, shredded Italian cheese, slivered almonds and balsamic vinegar. If I’m feeling wild, I’ll add hot peppers.

Admittedly, my salad isn’t for everyone. Here are a few other favorites:

Kale with Pomegranate Dressing and Ricotta Salata

Breakfast

Kale Smoothie:

  • Throw a bunch of de-stemmed kale into a blender or food processor with liquid of your choice
  • Add a ripe banana and any frozen fruit of your choosing
  • Option here to add in avocado, protein powder or flax seed
  • A quick and delicious combination? Kale, banana and orange juice. My mouth is already watering. Yours?

Scrambled eggs? Breakfast burritos? Yes and yes! Just sauté the kale and toss right in!
